I’m All Grown Up!

Tonight we celebrated…

Because today I got a promotion and will no longer be underemployed!

But the celebration for me is really about the fact that I stepped out (ok pushed myself out) of my comfort zone, stood up for myself, and went after what I wanted…

i love the “i’m so not impressed” look…

a couple weeks ago our friend JR was hiding out at our place while his wife studied for the bar exam (ughhhh those words still make me cringe!! BAR EXAM = HORRIBLE) anywayyyy… we all got caught up in watching a Throwdown, where Bobby took on the “Paella King of Northern California”

ever since… we have all been talking about getting together to make paella… so last night… we did it up spanish style!

Nikki and JR had been remodeling their kitchen, so i was excited to test it out now that the remodel is complete!

it’s such an amazing transformation, and it’s so THEM (interpretation: JR got a “pot filler” above the stove and nikki got completely organized shelves)

who wouldn’t want to cook in this kitchen!?!?

as soon as we walked in, JR got the sangria flowin…

we wanted to really do the paella fresh and from scratch.

while anne and JR got right to work…

nikki and i ran some errands in preparation for anne’s birthday party in less than TWO weeks! we have some big fun planned… but are keeping the details a secret. trust me though… it’s going to make for a killer post!

by the time we got back to the house, it was clear that anne and JR had been enjoying themselves…

but despite the sangria induced shenanigans… the spanish masterpiece was coming right along!

as they put on the finishing touches…

i tossed together a salad…

the paella was SO flavorful, and while i probably would have taken a shortcut, nikki and JR were so smart to get the fresh seafood!! it was hard work, but fun, yummy, and actually… such a pretty dish!!

it was a successful spanish night!!

do you try to buy fresh seafood or are you ok rolling with the frozen stuff?

and as for some trashy tv… bachelor thoughts? new bachelorette thoughts??

wow, that was a random intro…

hi everyone!!

pretty sure i’m on a sauerkraut high… i’m not sure why exactly, but i busted into a jar of sauerkraut a couple days ago, and have not stopped yet!

the other night for dinner i attempted to create a kraut centered dinner. i think i had reuben in my head, but went with homemade russian dressing???

i’m not gonna lie… it tasted about as bland and disturbing as it looks! the dave’s killer bread was KILLER (sidenote: if you haven’t discovered dave, do it!!), but the turkey was dry, the dressing was weird.

FAIL

but there was a silver lining…

i have come to terms with the fact that i love sauerkraut… it took me a while (when i was young i pretended like i hated it b/c everyone else my age thought it was gross) but i am embracing my fondness for kraut!

a couple days after my fail, i was at one of my most favoritest places and saw that allie had properly created a healthy living appropriate reuben at home!!

omg it’s like she was speaking directly to me!!

so for dinner that night…

flat out reuben and salad!!

SO GOOD!

i’m not gonna lie, last night, after porter’s sisters beat up on him in puppy class…

i may have possibly might could likely ate…

oh, does that look familiar??

this morning i was thinking there’s probably a way to have kraut oats???
but i chillaxed and went with something basic, but delightful

i was actually running so far behind this morning, that i didn’t arrive at work with breakfast. so i popped into the newly remodeled little store in our building and figured given my procrastinating prowess, it wouldn’t be a bad idea to keep some oats in my drawer at work…

i took an early lunch so i could scoop up farley boy and take him to the dr. to be de-frankensteined…

we waited for the dr… and in true farley fashion…

he was totally obsessed with the fact that he could hear noises on the other side of the door, but could not get out there and see what was goin down!?!?!

the dr. removed all of farley’s staples (bye bye frankenstein) and was so impressed with how quickly he’s recovered (his pimp walk / limp is almost completely gone)… that he doesn’t have to go back for any followup appointments!

with the good news we jetted back home. i had to make something pretty quick for lunch, and anne was sending me incredibly subtle hints like, “you have time to make me one of those flat out reubens, right??”

so… welll…..

hey, i didn’t have the salad with it, so it was like a totally different meal!!

and the best part…

the jar is not empty yet!!

dinner was royalty… BAMBOO SUSHI… nikki and jr had a gift card AND a coupon.

and b/c nikki and jr were still stuck in traffic, i did this…

(it’s how they pour sake… they overflow it into the little box below… something about signifying abundance… ok ok whatever, just drink it!!)

then the rest of the dinner was pretty much like THIS

i came home to catch up on modern family since i missed it last night

and b/c i was really good and did not have dessert at the restaurant, i whipped up some impromptu magic bullet ice cream deliciousness

– splash of vanilla extract
– lots of ice

my almost empty sauerkraut jar… HA! kidding.

we’re not there… yet!

so tell the truth… do you like sauerkraut!?!? are there any foods you always liked, but were afraid to admit it b/c you knew people would think you were weird/gross… ????

p.s. speaking of foods i love… anne is giving away some new chobani for kids… cruise over… you too could be a CHAMPION!

WARNING: it’s gettin ugly!

well, not many food photos today… but not b/c i didn’t feel like being the geek with the camera at all my meals… but b/c i didn’t eat much today.

as you may know, my son, farley, is a miniature doxie… and is long…

has had a rough go of it lately! he gets a sore back from time to time, but this time has been worse… for more than a week he’s been willingly staying in bed all day and night (NOT normal… he usually is up doing a lot of investigating and tracking around the yard)

this morning when we got up i noticed his back legs looked wobbly… i knew it was bad.

so i went to work and waited for the first chance to call the vet…

i never had breakfast.

my vet told me she was worried about Farley and that i needed to take him to the specialist right away.

after dropping him off at the specialist, and talking with him briefly, i knew no matter the outcome, it was going to be expensive and that my dog was in a lot of pain!

i had a good cry, and on my way back into work nikki stopped me and said she was buying me lunch. wha? food? i hadn’t even thought about it all day…

half a chicken salad and a cup of vegan tomato basil soup…

and nikki insisted i needed chocolate

i only ate about 1/3 of this, and gave the rest to a friend when we got back to work.

i couldn’t do anything the rest of the day… except wait for the doctor to call with the results of Farley’s tests.

well, the news wasn’t good… Farley has a ruptured disc, and needs surgery. dr. recommended he keep him over the weekend rather than risk him getting hurt even worse at home, and that they do the surgery first thing monday morning.

sooooo i came home and made some dinner

TAKE NOTE: THE BEST HUMMUS EVER !!!!!!

so i know he’s “just a DOG”… i can see my father now, rolling his eyes and giving me the “are you kidding me” look!

but it’s also “just money”… right??

i’ve cried as much as i can, and i’ve gotten MAD b/c i’ve been hyper vigilant about his back since the day i got him, and this has happened anyway, and i’ve told myself “he’s just a DOG”…

but the alternative to the surgery is having him put down. i know people do it, but really? i just don’t see myself being able to physically push those words out of my mouth!

he’s only 4… and he’s a lot more to me than “just a dog”…

so i turned to cookie dough for dessert… in liquid form

vanilla vodka and ginger ale

really… it tastes like cookie dough… try it.

i’m drained!!

and even though i know it’s better for him to stay with the dr., i’m so sad i can’t see my little dude right now!

injury reserve…

we have a doxie on the injury reserve at our house…

farley hurt his back. it happens from time to time (life is hard when you’re a foot and a half long and 2 inches tall)… i was hoping with a bit of rest he would get better, but given that he was in the above position for two days straight and yelped whenever anyone went near him, this morning i decided we’d be making a trip to the vet!

as long as he’s got his monkey…

porter does not have a sore back!


i hauled my cookies to work this morning, even though i didn’t want to, and enjoyed some greek yogurt, pumpkin, and granola…

all stirred up it basically looked like snot (yum) but tasted pretty good!

i only worked a 1/2 day so i could get home and take the patient to the dr., and secretly i was kind of excited about this (not the injured back or vet part), but b/c i could make lunch at home, which meant i could dig into the mound of groceries i stocked up on this weekend…

so much good HEALTHY food! i figured if i was going to resolve to get healthy, i needed to clean out the nast and replace it with the goods!

so for lunch…

bbq sunshine veggie burger, potato/lentil baked chips, pickle, pineapple

the sunshine burgers are the BEST brand of veggie burger, and this one was particularly glorious!

with the veggie burger and sandwich thin (you really should try these sandwich thins by the way)… i added frank’s sweet/hot bbq, lots of spinach, and peppercinis.

after spending considerable time and money at the vet, we got home and got the patient settled. we decided to tackle putting up the molding in the party room downstairs (for anyone who doesn’t know, i recently bought my first house and it’s a work in progress)… so we busted out anne’s new compressor and nail gun, and went to town!

(you know you’re jealous of my sparkly gold vinyl bench!!)

then i decided i’d been craving artichoke hearts long enough… so i made up a quick dip, which actually turned out pretty tasty! most artichoke dip recipes call for mayo, and i happen to think mayo is one of the most disgusting foods ever created!! so i made a mayo free artichoke and sun dried tomato dip!

1/2 cup 0% plain greek yogurt
1/2 cup chopped sun dried tomatoes (if packed in oil drain or blot off as much oil as possible)
1-1 1/2 cup shredded swiss cheese (i used about a cup of light cheese to keep the cals/fat down a bit)
14 oz can/jar artichoke hearts… drain and chop them
1/4 teaspoon garlic powder
1/4 teaspoon frank’s hot sauce (or more if you want it spicy… in retrospect i would have liked it spicier)
a sprinkle more of cheese for the top

**i kept mine basic like this, but i think you could also easily add something like crab or shrimp to this dish**

mix it all together, then spread into a shallow baking dish… bake at 350 for about 20 minutes, or until the cheese on top is melted/browning

after a long walk with the meandering one, and getting the patient his meds and making him comfortable, i decided i needed a cocktail, and not of the “mock” variety!

dinner votes were tallied as i sipped my libation… and breakfast pizza won!

we didn’t have any generic hashbrowns, so i pulled out another christmas gift… zeee spiralizer!!

flatouts, pizza sauce, spiralized yukon gold potato…


then i topped with tempeh bacon, scrambled egg/egg white, plenty of spinach, and a little bit of low fat cheese…

while the pizza was baking at 400, we had a small photo shoot!

speaking of bacon, jack never knows his bacon(aka tongue) is out b/c he has a little overbite! hey, all our pets have a touch of misfit.. we wouldn’t have it any other way!

i wonder if he’ll be larger than many others in his puppy class!?!?!

but i leave you with this question… do you like bad tv? b/c i do! i admit it! i mean, i watch the smart stuff too, but sometimes there’s just nothing that beats awesomely bad tv (bachelor, real world, jersey shore, gossip girl ETC)… does it make me less of a person!??!!
